There’s some Birthday Fun going on in our house today for my 17 year old daughter.
Not sure yet if I’m expecting 6 for dinner or 16. Depends on the weather and if 1/3 of an Abbotsford volleyball team is crashing here tonight. Rolling with it….
Sometimes food is just for fun, not always for optimal health. It’s called balance. Moderation. Today is one of those days. However the cheesecake is reduced in sugar and available in 2 portion sizes….so there are healthier options within that. And there’s an angel food cake cooling on the counter in case we end up with 16.
If you have a dairy sensitivity, today is NOT your day to swing by.
Here’s the recipe with reduced sugar option below.
16 oz cream cheese, room temperature
1 cup icing sugar
2 cups whipping cream
2 tsp natural vanilla extract
1 package Oreo cookies, chopped up
Whip cream cheese, icing sugar, and vanilla until smooth.
Whip cream until fluffy and stiff peaks form
Blend whipped cream and cream cheese mixture together another minute or so with mixer.
Layer with chopped oreos in jars.
Reduced sugar: Mix cream cheese with 1/3 cup icing sugar, 2/3 cup powdered erythritol. Layer with chopped oreos.
For even less sugar and more nutrition skip the oreos and layer with chopped fruit or berries.
